Traditional Balsamic Vinegar of Modena is one of the oldest and certainly the most typical agri-food products of the Province of Modena. Its origins are uncertain. Some suggest it was discovered by chance: given that traditional balsamic vinegar comes from the natural fermentation, acetification and long maturation of cooked grape must, it seems plausible that it first occurred by chance, when these microbial processes began in the vats of cooked grape must (known as “Saba”, widely used in local Modenese cooking, and in Roman times as a sweetener, along with honey) and then, as a result, people developed the process we still use today.
Traditional Balsamic Vinegar of Modena has always been offered as a gift to important people. In the past, these would have been imperial delegations travelling through the Duchy of Modena on their way to Rome. Today they are kings, princes, presidents, public figures, gourmets and anyone whom we wish to honour with a precious gift.
Protected Designation of Origin
In the 2000s, the European Commission added Balsamic Vinegar of Modena to the list of products with a protected designation of origin in line with regulation CEE 2081/92. This meant that production had to follow the ancient methods, all phases of the process had to be approved by a certifying body and batches had to be tasted and certified before bottling.
Traditional Balsamic Vinegar of Modena is bottled after ageing at least 12 years for the youngest product, and over 25 years for the Extra Vecchio (“Extra Aged”) product. The bottle has a unique, characteristic shape, protected by law, to be used by all producers: 100 ml in transparent glass designed by the Giugiaro Design studio, sealed with a numbered strip seal.
