This Balsamic Vinegar of Modena takes the name of Franco, from the family history. It has to do with the latest batches of barrels, which were produced together with Grandfather Franco. These barrels were made according to the traditional art of ancient barrel makers: harvested from wild trees, cut strictly in line with the grain of the wood and air dried in steres for several years.

Balsamic Vinegar of Modena was added to the list of PDO products in the 2000s by the European Commission. Production regulations must be strictly observed. Moreover, all batches of product must be tasted and certified before bottling.
