Traditional Balsamic Vinegar of Modena is one of the oldest and certainly most typical agri-food products of the Province of Modena.
Traditional Balsamic Vinegar of Modena is no ordinary vinegar, but has distinct bouquet all of its own. Its well-balanced sweet-sour flavour will make your dishes and recipes extra special.
It is recommended never to cook it, but rather to add it to dishes just before serving. Try it as an apéritif on a porcelain teaspoon, on thin slivers of Parmigiano Reggiano cheese, on risotto, filets of meat, grilled prawns, or on gratin of scallops. You can also enjoy it with sweet dishes such as strawberries, figs or ice cream.
PROTECTED DESIGNATION OF ORIGIN (PDO)
In the 2000s, the European Commission added Balsamic Vinegar of Modena to the list of products with a Protected Designation of Origin, in line with regulation CEE 2081/92. This meant that all phases of production had to follow the traditional ancient methods.
Traditional Balsamic Vinegar of Modena is bottled after ageing at least 12 years for the youngest product, and over 25 years for the Extra Vecchio (“Extra Aged”) product. The bottle has a unique characteristic shape, protected by law, to be used by all producers: 100 ml in transparent glass designed by the Giugiaro Design studio, sealed with a numbered strip seal.
