Strolghino di Culatello is an Italian sausage - or salame in Italian - typical of the provinces of Parma and Piacenza in Emilia Romagna. It is made with fresh Culatello ham, the famous product from the same region of Parma. It is very lean, melts in the mouth and delicately flavoured.
Perfect with the apéritif, or snack at any time of the day: Slice it finely at an angle.
Each salami weighs around 300 g.

The name Strolghino come from strolga, or “guess" in the local dialect. Indeed, the people used this sausage as a sort of gauge to determine the optimum periods to age larger salami and Parma hams.
