Culatello is an Italian cold cut, also known as Culatta. It is aged 15 months after being painstakingly hand processed using only sea salt, with no added preservatives or other additives. Peasant Culatello has a distinctive colouring, and is highly prized for its aroma and authentic flavour. It is a sweet, delicately flavoured product, typical of the traditional craft of charcuterie.

How to keep Culatello:
Culatello keeps well thanks to its protective rind, perfectly preserving the product’s organoleptic qualities for as long as several weeks: simply wrap the cut end of the Peasant Culatello in aluminium foil and the whole piece in a large cloth before placing it in the fridge.
