Coppa is a dry-cured cold cut found typically throughout the entire Italian peninsula. Made from pork, Coppa di Langhirano is processed using ancient methods, including the long ageing period, from which it derives its flavour. The meat, from Italian pigs, is rubbed with salt and herbs and spices typical of the region of production.
It is eaten in thin slices to bring out its flavour. Italians enjoy eating it with pickled artichokes. It makes a lovely starter with melon.
Coppa has various names depending on the region and recipe in question. Hautes Saveurs has selected a product from the hills of Langhirano, in the Province of Parma, already world famous for its much celebrated Parma Ham.
